to share our Thanksgiving Dinner menu. Several of us have posted things we are having, but I thought it would be fun to have it all together.

I polled the kids and they unanimously voted for our traditional family feast *sigh*...so no fancy stuff this year. I guess I'll just have to wait and get creative with the leftovers.

I'll start.

-Antipasto platter (new)
-Fresh baked bread
-Crackers
-Turkey (brining this year....shhhh don't tell the family)
-Ma Ma's stuffing (Pepperidge Farms-don't know why, stale bread, saltines, chopped onion, boiled egg, moistened with chicken stock and baked in "patties" with a few pats of butter on top of each until crispy on top...YUM!)
-Rice (DD pick) or mashers
-Ma Ma's giblet gravy (usual- unused chicken parts, roux and boiled egg)
-Ma Ma's sweet potatoes (baked with pancake syrup- I know weird but it doesn't get "ropey" like with other syrups, sugar, cinnamon, and a little butter)
-Butter beans (Is that one word?)
-Roasted asparagus
-Rutabagas (boiled with fat meat-removed and mashed)
-Collards (steamed with ham hock and chicken stock whole, coarsely chopped)
-Cranberry sauce (Don't laugh, but they LIKE the canned stuff. But I AM trying a Sandra Lee recipe that is like a congealed salad using the canned stuff.)
-Deviled eggs (I may get "wild" here and add some wasabi or something)
-Home baked dinner rolls (still trying to decide on the recipe)
-Ma Ma's pecan pie or Aunt Oleta's Chocolate Pie (maybe both- no notes, these require a "recipe"...LOL!)

Can you hear my arteries clogging from where you are? I added notes on how some things were cooked since these are things that have been cooked in the same manner in my family for several generations and may be unfamiliar to some of you who wouldn't be familiar with how "we" cook things like this "down here"...LOL!

Wow, what a spread! Thanksgiving, unless I host a gathering, is very low key here. DH, his mother, and enough wine to get me through a few hours! Enjoy your feast, Daphne!

I'll post my menu Wednesday night sometime...if not on Thursday night. It'll be my work menu as I am planning a bottle of Molson and a peanut butter and jelly sandwich after work Thursday night.

We decided to do non gourmet, classic Thanksgiving with a few exceptions

Classic RoTel/Velveeta dip with tortilla chips
Classic cajun fried turkey
Peppered Ham from Burgers in Missouri
Campbells green bean casserole
Sliced potato casserole/hatch chili/jack cheese*
Tortilla/cornbread dressing*
canned cranberry sauce (we've done all the originals)
Apple pie with ice cream or cheddar cheese
Serve with a pinot noir or a sauvignon blanc-dessert with coffee
*not traditional

Here is our menu....

Light snacks during football game watching... Hubby and I take a walk while the bird cooks. We'll have 3 of our 4 children home for dinner. Can't find any "orphans" looking for a dinner this year.

Menu

Roasted turkey (a small bird, 13 lbs)
Lots of Gravy - Son the chef will be in charge of it - promises no lumps!
Mashed potatoes
Stuffing - doctored Pepperidge Farm
Green bean casserole - son in charge of this, too
Cranberry relish
Dinner rolls
Black olives
Pumpkin and Apple pies

Since I will be working all day, our feast is scheduled for Saturday afternoon at my SIL. Which will be tricky since I am responsible for apple pie, pecan pie and this wierd fruit salad which we have made for ages in our family. And I work breakfast Sat. So I am going to have to do the pies on Friday and try to throw this salad together when I get home Sat., since it doesn't hold terribly well from one day to the next.

Daphne, we are die-hard rutabaga lovers in our family, would you elaborate on the "meat fat?" And the boiled eggs in the stuffing - is that a southern thing? I never heard of that!

Funny how all of you guys into food - and the big day comes and you can't get away from those favorites - the green bean casserole and the canned cranberries. We are back to that "memories and food" thing we were talking about in the other thread!

Requested not to do any fancy fixins here, home-style all the way...

Appetizers:
Cream cheese and black olive cheese ball,
spinach and cream cheese w/ almonds ball w/ crackers
Fresh fruit salad
Pumpkin cookies

Dinner:
Turkey in a (brine now with rosemary/peppercorns/salt/brown sugar.)
Will baste with butter/sage/ salt & pepper all over and under the skin.

Stuffing- just regular white bread w/ onions/ carrots/ celery/ chicken stock/ salt & pepper/ poultry seasoning/ sage.

Pennsylvania Dutch style potatoes - add cooked stuffing to mashed potatoes, add an egg and put into Casserole dish and bake in oven.

Gravy - the fattening kind; with drippings from the turkey.

Cope's Corn - ( no other corn will do!) Baked in the oven

Green Beans with a bechamel sauce with mushrooms.

Mashed sweet potatoes with orange juice and brown sugar.

Store bought canned cranberry sauce - not allowed to do anything to...
Store brought dinner rolls - they're better then mine.

Dessert:
Pumpkin- chocolate, cream cheese pie - never made, found in magazine - hope its good! - ( just realized I have a lot of cream cheese going on...)

I THOT that kid was coming ( ) for Thanksgiving, so planned the old traditional dinner also. She flaked out, but I had already invited others so will go with it.

Starters -
Pumpkin Spread on Nut Bread
Bacon Wrapped Pork

amuse-bouche -
Leek and Walnut Fritter with Wasabi oil/Wasabi Mayonnaise

Main Course -
Salad of some sort - friends bringing
Over-cooked green beans
Garlic Mashed potatoes
Mashed yams with marshmallows
Sausage-Aple dressing
Oyster dressing - friends bringing
Pink Salad
dinner rolls - friends bringing
Ham baked with o.j./maple syrup
Roasted Turkey with Cristine's Marinade
Gravy
olives/celery w/peanut butter

dessert -
Pumpkin Pie with whipped cream
Mincemeat Pie (I always throw most of it away, but I have to have one slice!!)

Funny how we all go back to traditional stuff for Thanksgiving.

Linda, I'm not sure what Mom is using this year. She usually boils them with streak-o-lean (?) I think...you know...kinda like bacon, but more fat. Sometimes we've added bacon grease, and then I've just done it with chicken stock. Like you, I'll eat them any way you cook 'em. As for the chopped boiled egg, I guess it is a Southern thing. It's added with the diced giblets as it thickens.

That Pennsylvania Dutch potatoes stuff sounds interesting. I've never heard of that.

You know, I have NEVER had mincemeat pie. It always "sounded" weird....LOL!

Honey Baked Ham
Turkey w/gravy
Mashed Potatoes
Cornbread & Sausage Stuffing (I'm bringing this)
Gulliver's Creamed Corn
Green Bean Casserole (I'm also bringing this)
Rolls
Pumpkin and Apple Pies

I'm not sure what the appetizers are supposed to be.
