Hi Everyone

Here is a recipe we made in Cooking Class - I really enjoyed it.



Pastry for one 12 in. Tart

1-1/2 cup Flour
1/2 C. Instant Oatmeal (Quick)
1/3 tsp Salt
1/3 tsp sugar
10 T cold butter or lard or 5 T. each
6-8 T cold Water

Mix Flour, Oatmeal, Sugar , Salt cut in Butter to size of small Peas. Pour in water and Mix dough together. Add 1 or 2 T. more water as needed. Turn out onto Floured Board and gently knead 30 seconds, Wrap and Chill 1 hour

Butter well or spray a 12 " Tarte pan with false bottom.
Roll out chilled Dough to 15 in circle and place into buttered pan. Press edges, Crimp or Trim. Line bottom with foil and pour in 2-3 cups dried beans,
Bale 400 10-12 min. Remove foil and bake another 5 minutes. Remove from oven and cool.

Prepare the filling -

2 T oil
1/2 c. minced onions
1/2 c. Cooked chopped Bacon or Ham
1/2 tsp. paprika
1/4 .lb Gruyere cheese , grated
1/4 .lb Emmentaler cheese, grated
2 eggs
1 egg yolk
2/3 cup heavy cream
1/2 cup Milk
Pinch, Salt, Pepper, Nutmeg

Fry Onions in oil to transparent, toss in Bacon and paprika stir to heat and set aside. Sprinkle half the cheeses on the pastry shell. Spread onion/bacon mixture evenly and top with remaining cheese.

Beat eggs, yolk, cream, milk, salt, pepper and nutmeg. Pour evenly over cheese.
Bake 350 for ten minutes, then
bake 400 - 12 -15 minutes more till puffy, golden and toothpick comes out clean.

serve hot or at room temp.

Poppy Seed Cream,

1 cup sour cream
1 tsp poppy seeds Mix all and Chill
1 T chives
3/4 tsp Season Salt
1/2 tsp Sugar

Hi

We have a kitchen store over in Mt. Vernon that offer classes quarterly

from many different chefs in the area. So you get to pick and choose

who you would like to take from. This recipe is from a Chef we have

always liked.

He does recipes from many different countries.

Its always interesting to see the different Chefs and how they teach.

and the tidbits they tell you.
