Decided to try another one of my experimental creations. Worked out VERY well, and I shall certainly do this again.

Ingredients:
- 4 Tbsp Butter
- 1 Large Yellow onion, chopped
- 6 leeks, white and light-green parts only, split, rinsed, and chopped
- 8 Green onions, white and green parts, chopped
- 6 Cloves Garlic, minced
- 2 tsp Thyme
- Salt and freshly ground black pepper to taste
- 4 C Chicken stock
- 2 C Heavy cream
- In a dutch oven, melt the butter.
- Add the onions, leeks, green onions, garlic and seasonings, and cook over medium heat until soft. To take advantage of the relative cooking times, I started heating the onions as I prepped the leeks, then added the leeks and prepped the green onions, then added the green onions and minced the garlic, then added the garlic.
- Add the chicken stock, bring to a boil, then reduce heat, cover and simmer for 30 minutes, stirring occasionally.
- Purée the mixture in batches until smooth, then return to the pot and to the stove.
- Add the heavy cream and heat through.
- Adjust the seasonings, if necessary.
