Welcome Haila! I make these a lot because we just love them. I leave off the topping sauce though. Here ya go!
Meatloaf Muffins For the topping sauce- Combine: ½ cup ketchup ½ cup prepared yellow mustard ½ cup brown sugar For the meatloaf- 3 slices white bread torn ¾ cup whole milk 2 eggs, beaten 2 lb. ground chuck ½ cup onion, diced ½ cup tomato, seeded, diced ¼ cup minced fresh parsley 2 T Worcestershire sauce 1 T garlic, minced 1 T kosher salt 2 t black pepper Preheat oven to 400. Line a baking sheet with parchment paper or foil. Combine bread, milk, and eggs in a large bowl; mash to a paste consistency. Add remaining ingredients and mix till just blended. Using a ½ cup measure, portion mixture and roll into ball. Place into a 12 cup muffin tin. Top each with 1T sauce. Place muffin tin on prepared baking sheet and roast until cooked through, 25-30 minutes.

Meatloaf Muffins with Tomato Topping Makes 12 muffins, 2 cups gravy Total time: 1 hour FOR THE TOMATO GRAVY— Sauté in 2 T. Olive Oil; Add: 1 cup onion, diced 1 can diced tomatoes in juice (14 oz) 1 cup beef broth ¼ cup ketchup 2 T. prepared yellow mustard 2 T. brown sugar Salt to taste FOR THE TOPPING SAUCE— Combine: ½ cup ketchup ½ cup prepared yellow mustard ½ cup brown sugar FOR THE MEATLOAF— Combine; Add: 3 slices white bread (such as Pepperidge Farm), torn ¾ cup whole milk 2 eggs, beaten 2 lb ground chuck ½ cup onion, diced ½ cup tomato, seeded, diced ¼ cup minced fresh parsley 2 T. Combine bread, milk, and eggs in a large mixing bowl; mash to a paste consistency. Add remaining ingredients and mix just until blended. Using a ½ cup measure, portion mixture into a 12-cup muffin tin, then top each with 1 T. topping sauce. Place muffin tin on prepared baking sheet and roast until cooked through, 25-30 minutes. Jean, it's the same recipe. Theresa left off the tomato gravy...said she didn't use it. On the other hand, I do use it...We love this recipe....been a while!
