It actually says "White Trash", but I covered the word white with paper that said trailer It may be a little while before you get it, because I want to browse through it first.

There are actually a few good recipes in it! I found it in the drawer of my desk when I first got the job at the marina. It took me 5 years to find out who's it was.
You only live once . . . but if you do it right once should be enough!

We had a guest in 1995 from the deep south!! He was such a delight!!!!!!!! As a thank you for our hospitality he sent along White Trash Cooking II by Ernest Matthew Mickler. What a hoot this is--Big Grin

Something very different but recipes he loved.

Aunt Sarah's Stepped On Corn Bread

Alabama ground cormeal
Enough hot water to make a mush
Plenty bacon drippings

Make pone. Bake 2-3 hours at 250 degrees

Aunt Sarah said "Careful you don't hurt your foot."

Gaynell's Tater Toes Casserole
2 pounds ground beef
1 large onion, chopped
1 can Campbell's Cream of Mushroom Soup
1 can Campbell's Golden Mushroom Soup
1 soup can of water
1-2 pound package of Tater Tots or 2 1-lb packages

Fry down the beef and onion. Add the soup and water and mix thoroughly. Pour the Tater Tots over the top and cook at 475 degrees for 25 minutes.

Serves 6

What a fun read this was----some pretty good southern recipes as well.
