Cleaning out the freezer yet again - but this time I hit the mother lode!! Found small pkgs. of sanddabs, halibut cheeks and 1/2 a lb. of calamari. So, heat or no heat, we're having a fun fried fish and grilled fries dinner.

I got two eggplants yesterday, so am making an eggplant parm recipe from Dr. Gourmet that sounds good. It's baked in au gratin dishes for individual servings. Will probably have a side salad and some grilled bruschetta to go with.

I've got some chicken marinating in coconut milk, ginger, thai chilies, sesame oil, fish sauce, lemongrass, basil, brown sugar and lime. Tony'll throw that on the grill. Just some TJ's frozen jasmine rice and steamed edamame to go with.

The recipe that caught my eye for tonight is called (brace yourselves).............Chicken Porno Blue
The side dishes and desserts have equally risqué names. All the recipes are scaled down for two, I think I'm going to enjoy this book (how could I not?)

forgot to mention that I am making the meatballs in the paprika sauce and serving it over french fries! I don't know why that sounds so good to me. shucks, I already went to the store and totally forgot to get a vegetable!

Jean, the results wre terrific! I don't remember cooking a Cordon Bleu recipe before, but this one was simple and so very good!! Used Stilton for the bleu. Wonderful spinach/pear salad as a side too.
