I made this yesterday and it was positively lovely. I hope that if you make it you enjoy it as much as I did.

Creamy Ambrosia Cheesecake

Amount Measure Ingredient -- Preparation Method

1 1/3 cups graham cracker crumbs
1/2 cup sweetened coconut flakes
1/4 cup unsalted butter -- melted
1 1/4 cups sugar, plus 2 Tbsp -- divided
1 11 oz can mandarin orange sections
1 8 oz can crushed pineapple in juice
3 8 oz packages cream cheese -- softened
3 large eggs
2 cups-12 oz white chocolate chips
Tropical Fruit Sauce

Heat oven to 350°F. Stir graham cracker crumbs, coconut, melted butter and 2 Tbsp sugar in a medium bowl. Press mixture firmly onto bottom of a 9-inch springform pan. Bake 8 minutes; cool slightly. Drain oranges and pineapple, reserving juices. Chop oranges into small pieces.

Beat cream cheese in a large bowl until fluffy. Add remaining 1 1/4 cups sugar; beat well. Add eggs; beat well. Stir in white chocolate chips, oranges and pineapple. Pour mixture over crust.

Bake 60 to 65 minutes or until center is almost set. Remove from oven to a wire rack. With a knife, loosen cake from side of pan. Cool completely; remove side of pan. Cover; refrigerate until cold. Serve with Tropical Fruit Sauce. Garnish with additional coconut, if desired. Cover and refrigerate leftovers.

Tropical Fruit Sauce

Amount Measure Ingredient -- Preparation Method

juice drained from canned mandarin oranges and crushed pineapple
1/4 cup sugar
1 tablespoon cornstarch
1/4 teaspoon orange or pineapple extract

Combine fruit juices; pour 1 cup combined juice into medium saucepan and discard any remaining juices. Stir in sugar and cornstarch. Cook over medium heat, stirring constantly, until thickened. Remove from heat. Stir in orange or pineapple extract. Cool to room temperature before serving. Cover and refrigerate leftover sauce.

NOTES : I used frozen orange and pineapple juice concentrate to make up the 1 cup juice. It is more flavorful than the canned juice, especially the mandarin orange juice.

I'm not a big cheesecake fan, so I probably wouldn't have commented on it - but, it does look like a nice dessert for summer.

I wasn't on last night so didn't see it till now. Sounds delightful, Billy. Just won't be on my menu anytime soon, as we're trying to avoid desserts, so you will have to enjoy it for me.

I don't make many desserts - I just eat them. I think my kids might really enjoy this one though, even though they are not real cheese cake fans. I will keep this one marked to give a try.

Billy, my Mom makes this every Thanksgiving. It's a great recipe, she usually cuts it up, inserts wax paper squares between the slices and freezes the leftovers. It holds very well. It's a great bridal shower dessert, as well.

GOOD GRIEF!!!! Is EVERYBODY having a sugar rush this week...LOL!!!!

Billy while I love cheesecake, this one is just not getting it for me. I have never cared for the salad, probably due to the coconut. I may give it a try without the coconut, though. It does sound like a nice summer dessert.

I only ate a piece about 1/2" wide at the outside. That's about all I want. The rest I gave away as Paul won't eat Cheesecake.
