It was a 9 pound slab before I cut it in half. It takes about 9 or 10 days to do it right but it sure smells and tastes great!

That looks amazing, Billy. So, is the finished product fully cooked, or do you slice it down and fry it just like bacon from the meat counter? How long does it keep?

Lookin' good!! I have 2 more pieces of pork belly in the freezer and I keep going back and forth trying to decide what to make with them. We still have some bacon and a couple of pieces of other methods I did. decisions, decisions

It looks fantastic Billy! I'm planning to pick up a pork belly (or two) next week, so I'll be bugging you guys for the method/recipe. First I've got to be sure they have them. They didn't when we were at the market a few weeks ago, but the butcher said he usually had them in stock!
