What are you all up to?

I have to choose between a crockpot dinner and a tuna casserole a neighbor gave me that sounds pretty good. decisions, decisions.
Retired and having fun writing cookbooks, tasting wine and sharing recipes with all my friends.

I have to go get my car inspected for PA plates so I need something quick and easy. I am going to try to make the chicken cutlets with spicy beans and kale from the October issue. Hope the store has kale. Tuna casserole sounds so good today. I need a good recipe, will have to do a search to see if that topic has been covered.

I made the chicken cutlets with spicy beans and kale and I meant to do a review and never did. If I remember correctly I liked it but I was expecting some sauce to spoon over the chicken (that's what the picture shows, right?). That kind of bugged me. Or maybe I just was in a bad mood. :_

We're eating the last of the stew. Got a lot of mileage out of that dish!

We've got Bible study tonight, so I'm thawing ribs to throw on the grill when we get home...corn and salad on the side. I am so tired today!

Trixxee, there does seem to be a juice of some kind on the chicken.....is it the broth from the kale and beans?

That's what I mean - there wasn't any liquid left! My best friend and I call that kind of thing, "sauce? what sauce?"

I'll have to go find my issue so I can refresh my memory but I seem to remember the beans and kale absorbed any and all liquid.

Thanks to Trixxee's report, I doubled the kale, and all of the sauce ingredients. So glad I did, I cannot imagine how dry it would have been. We really liked the dish, a great comfort type dinner that is actually healthy. I also put the lid on the pan while the kale wilted to hold in the moisture. There are not any leftovers!
