Eggs in Pepper Ring Mold

I am sure I am not the first person to come up with this, but I will show you all anyway. And if all of you have been doing this for years, I will just have to flog myself!

These were really good and kept my eggs all neat and tidy, without using the egg mold I normally use. No messy egg mold to clean up either!

Great idea!! I'll bet a thick large sweet onion ring would work too. Thanks for sharing.

We like peppers. Thanks for the idea.
Practice safe lunch. Use a condiment.

No, I didn't flip them. I did put a cover on and after a bit added a bit of water for steam. You can't see it well but the peppers are cout about 1/2"-3/4" thick. They seemed to soften really nicely too. Musta been the steam.

I love this idea. How long did you cook them? I'm guessing 4-5 minutes?
