I am looking for a recipe from C@H. I don't recall many of the ingredients but here is what I do remember:

  • It was a soup/stew
  • It was topped with roasted pumpkin seeds
  • I think there was a meat in there like sausage or kielbasa or something like that


It was an ethnic soup, I thought my daughter would like it, if I converted it to vegan. If anyone has any ideas, let me know.

Sounds familiar, Laura, wish I had my books here with me - maybe I should get a little trailer to haul around behind the big trailer filled with my books. What a sight!

Found it!

It is in the February 2010 issue No. 79 on page 11

It is called South American Butternut Squash Stew with Roasted Seeds.

It looks so good topped with roasted seeds and cotija or feta. It's not a cream soup. It has chuncks of squash, green beans, corn, sausage, tomatoes. Very pretty.
