I think I posted this recipe a long time ago. I made it today into some smaller cakes to take to my Aunt this month. But, this time I 'frosted' it with a Chocolate Espresso Sauce. Oh my, what a wonderful flavor.
Don't bother looking at this recipe if you're a purist and would not dream of using a cake mix...who cares, it's really good. It's a recipe that was part of a series years ago in the newspaper where this gal gave 7 days worth of menus and her dishes were really tasty.

AUNT BOOJIE'S CHOCOLATE BOX CAKE - 7-DAY
5 lg egg white
1 1/3 cup buttermilk
1/3 cup unsweetened applesauce
18 1/4 oz. pkg. Chocolate cake mix*

*Use Pillsbury Moist Deluxe Dark Chocolate Fudge Mix. (Roy couldn't find this one anymore, so we went with Pillsbury Moist Deluxe Chocolate cake mix)
Heat oven to 350 F.
Coat a 9X13" baking dish with cooking spray.
In a large bowl, beat the egg whites on high with an electric mixer for 1 min., or till foamy.
Add the buttermilk, applesauce and mix on med. for 1 min., or till combined.
Add the cake mix & beat 2 min.
Scrape into baking dish.
Bake 30-35 min., or till pick comes out cleans and cake is pulling away from sides of pan.
Cool completely in pan; then spread with chocolate frosting.
(This is very good even with no frosting)

I usually didn't put frosting on it, but this time I spooned some of this on it - we just took a slice to taste....geez, it's so good!

1/2 cup hot water
1/3 cup heavy cream
3 T. sugar
2 tsp. instant espresso powder
8 oz. semi-sweet chocolate, chopped
1/2 (yeah
) cup butter, cut in pieces
Bring water, cream, sugar, and espresso powder to simmer in heavy medium saucepan, stirring occasionally.
Reduce heat to low and add chocolate and butter whisk until melted and smooth.
