What's on the menu for today?

I dug into an older C@H (issue #81 - June 2010) for Steak Stacks with tomatoes and fresh mozz. I know, the tomatoes aren't good, but... Pesto Pasta with spinach is a go with dish. Roy brought home a flat iron steak, so looked around and this sounded good.

Going with leftovers tonight - another chicken burrito, taco or quesadilla. Sounds perfect - Michael seems to have a lot of homework on Wednesdays so dinner will be one less thing to have to really deal with.

Tonight's a rare non-Cuisine at Home recipe. Camarones Rellenos Envueltos con Tocino (manchego cheese stuffed shrimp wrapped with bacon) with a chipotle mayonnaise and Mexican rice as a side (from the Cuisine for Two cookbook).

Sounds very tasty, Blane!!

Well, my 'cheap and dirty' version of C@H Steak Stacks turned out very tasty. Used Pantry/freezer items - frozen spinach and regular basil pesto.

Don't know that I'll do it again, but was a nice dinner. Oh, and Daphne, of course I sprinkled the pasta with pine nuts.

Sounds good, Blane. Come back and let us know what you think, please.

We're having oven-fried chicken thighs tonight, creamy zucchini casserole, and a salad.

I've made it a few times before and it's delicious. It's an appetizer, but you can build a meal around it.

Jean that looks beautiful. Blaine those shrimp sound soooo good.

I have no real idea yet. I have ground turkey, some leftover tomato sauce (from the pizza the other night), some pizza dough, mushrooms, and cheese. Perhaps a calzone? Maybe just some pasta with meat sauce, a veg, and maybe some breadsticks?

That sounds really good, Blane! Very pretty, Jean! I would have loved either dinner. I got stringy beef stew at church.
