Found this on the El Gourmet website and it sounded so interesting I went ahead and translated it. Haven't tried it, yet, but plan to do so.
Popcorn Ice Cream with Fig Chutney and Caramelised Figs
Makes 4 servings.

Ingredients for the ice cream:
- Cream: 2 Cups
- Vanilla 1 Tbsp
- Egg yolks: 6
- Sugar: 1/2 Cup
- Butter: 3 1/2 Tbsp
- Popcorn (unpopped): 1 Cup
- Cayenne or chile piquin powder: A pinch
- Brown sugar: 1 cup
- Butter: 3 Tbsp, softened
- Balsamic vinegar: 2 Tbsp
- Figs: 6, halved
- Figs: 4, halved
- Sugar: As needed
- Cayenne or chile piquin powder: A pinch
- Butter: 1 Tbsp
- Romero: 1 Sprig
- Put the cream and vanilla into a pot.
- Bring to a boil over medium heat.
- Meanwhile, put the egg yolks and the sugar into a bowl.
- Stir to dissolve sugar.
- Melt the butter in a deep pot.
- Add the corn.
- Cook over low heat.
- Sprinkle with cayenne pepper.
- Cover the pot.
- After the corn has finished popping, let it cool.
- Process one quarter of the popcorn and reserve the rest.
- Once the cream starts to boil, whisk it into the yolks.
- Incorporate the processed popcorn.
- Whisk again to ensure that the ingredients are thoroughly mixed.
- Allow the mixture to cool.
- Incorporate half of the whole popcorn and mix well.
- Place into the freezer for 24 hours.
- Bring plenty of water
- to a boil in a saucepan.
- Place the fig halves into a sealable, boilable plastic bag.
- Add the balsamic vinegar, butter and sugar.
- Seal the bag, put it into the pot with boiling water, cover and simmer for about 30 minutes.
- Remove the bag from the pot, open it and let it cool.
- Sprinkle the fig halves with the sugar and cayenne.
- Melt the butter in a hot pan.
- Add the rosemary.
- Add the fig halves, cut side down.
- Cook until browned.
- Turn them over and finish cooking.
- Place the figs into a bowl and allow them to cool.
- Mash the figs with a fork.
- Place a portion of fig chutney onto a plate.
- Add some whole popcorn.
- Add two small scoops of the ice cream.
- Garnish with the caramelised figs.
