What's on the menu for today??
We're going to go out and have Mexican food - been a long time. Fingers crossed it's a good place.

I *think* I am making that one pan skillet dish I posted a while back - with kielbasa, red potatoes, onions, and cabbage (original recipe called for spinach) and you toss it all with an apple cider/brown sugar/mustard mixture. More fallish than springish though.

Hamburger left over and salad leftover will turn into Taco Salad. YUM!

Today it's one of my favorite Cuisine at Home recipes, Tarragon cream chicken breasts with prosciutto and mushrooms. I'm not ashamed to lick the plate on this one.

Just finished my work for the day... Hooray!
I am going to make Pioneer Woman Enchiladas! I think I will make a double batch and freeze half for another day. I've done it with these before and it worked out great.

That really does look yummy. We got cold and rainy weather back, so I decided comfort food was in order. We're having patty melts and a chopped veggie salad on the side to keep it at least partially healthy.
