I'd like to offer up a suggestion to all of us who like this dessert - how about playing with it and making it our own??? Oatmeal has been suggested as a change for the topping maybe pine nuts, how about some additions for the filling?

go with pineapple -
a little mint, basil.... rosemary
cayenne, cinnamon, ginger.....star anise
raspberries, walnuts

oh, there are all kinds of things to play with in it - hmmmmm...

I was thinking about a hint of cinnamon in the topping.

Maybe add some mango or papaya?

As for adding nuts, I would go for sliced almonds, maybe toffee flavored.

I just have to say that I swear this stuff gets better every day! If you can make it last. Today is day 3 and I just nabbed a spoonful. Hoping I can leave it alone until after dinner tonight. No way there will be a day 4 though.

OMG!!! What was I not thinking?! Fresh/toasted coconut on top! Either added after baking or during the last 15 minutes to toast.

Barbara, that's how we had it, warm with vanilla ice cream. Pure heaven! But, now that you mentioned coconut, I think that's going to be the first idea I try. Toasting for the last 15 minutes sounds like a great way to go.
