Tonight my wife is making the Chicken Bistro Cakes from a Cuisine at Home Weeknight Menus cook book, but with an Almond Butter Sauce, instead of the Concassé. I'm making Maque Choux for the side dish.

Using Jean's recipe for pizza dough, we will be grilling pizza tonight. Haven't decided what all I will be putting on them, but have two pieces of l/o corned beef that can be diced and put on one with swiss cheese, and l/o smoked chicken that can go on another. Just not sure what else to put on the one with smoked chicken. Thinking about alfredo, mushrooms and spinach....

It's the last day of spring today, but it feels like the middle of summer here. From the August 2002 issue, I'm making the Green Goddess Prawn Salad w/ Avocado, Mango, Cantaloupe and Red Grapes.

It's going to be a hot one today, time to fire up the grill. From one of the Cuisine at Home's grilling cook books, I'm making Coconut Marinated Chicken Skewers with Pineapple Rice. The rice was one of Jean's favorites.

Breakfast for dinner here. Strawberry Cheesecake Pancakes with link sausage. It's a great recipe from issue #57.

Father's Day is Sunday.  What are your special plans for Father's Day Dinner?  

We haven't made any firm plans yet . . . I'm looking for ideas.
